Late harvest wine (vendange tardive, late harvest) The peculiarities of amarone production are the withering of the grapes on the ridge before harvest. Up to that point, the winemaking process is no different than that applied to other red wines. Legend has it that Amarone wine was born thanks to winemaker Adelino Lecchese, who in 1936 discovered a long-forgotten cask of Recchoto in the cellar. The wine had been stored too long, and all the sugar had time to be converted into alcohol. The gentleman tasted the drink and exclaimed: "This wine is not bitter - it is the bitterest (amarone)!" - That's how the drink got its name. A unique, inimitable wine, excellent with fatty steak, venison, aged cheeses, chocolate, risotto. It can also be served to Game, roasts and meat delicacies. The recommended serving temperature is 12-14°C.
